4 Slices of Bread, cut ¼ inch (seeded sour dough recommended)
8 Cage Free Eggs
4-6 oz Arugula

Avocado Smash:
2 Lg Hass Avocados
¼ c Red Onion, fine diced
1 tbsp Parsley or Cilantro, fine chopped
1 tbsp Lime or Lemon Juice
¼ tsp of each: Salt, Pepper, & Chile Powder

Step 1: Begin by preparing your delightful avocado smash. Chop the red onion and parsley/cilantro, then squeeze the citrus. In a bowl, combine all the ingredients, peel and pit the avocados, proceed to mash them to your preferred texture.
