Roasted Whole Turkey with Truffle Butter and Black Beer

Let the star of your holiday meal be as tasty as it looks. This inspired recipe is a hit in all of our guest’s homes.

INGREDIENTS
Turkey:
14-lb turkey

Seasoning:
5 TBSP Salt
2 Tbsp brown sugar
4 TBS dried rosemary
3 TBSP dried Thyme
4 TBSP dried Sage
1 TBS Paprika
4 TBSP dried garlic
Zest of 1 orange
Zest of 2 limes

Aromatics to stuff the bird:
1 orange cut in half
2 apples cut in half
1 handful of sage
1 onion cut in quarters
4 rosemary sprigs
1 bunch of thyme

Tray Ingredients:
4 onions quartered
6 carrots skin removed
8 celery sticks
1/2 Cup of chicken broth

Herb Butter:
1/2 butter softened
1 TBS crushed garlic
1 TBSP Salt
4 TBS fresh chopped sage
4 TBS freshly chopped rosemary
4 TBS freshly chopped thyme
1/2 Cup truffle honey

Beer Cheesecloth:
1 can black beer of choice
1/4 cup melted butter
1 cheesecloth

METHOD:
Step 1: Place your defrosted turkey on a baking sheet pat dry with paper towels and be sure to remove all the insides
Step 2: Mix the seasonings
Step 3: Apply the seasonings generously to the bird both inside the cavity and out
Step 4: Cover and place in the refrigerator for 24 hours maximum 48.
Step 5: The day of your party make sure you take out your turkey 3 hours prior to cooking
Step 6: Make your herb butter
Step 7: Remove the bird from the refrigerator and with your hands gently separate the turkey’s skin from the flesh
Step 8: Add the herb butter into the flesh and over the turkey. Rub well
Step 9: On a roasting pan but the carrots, onions, celery and chicken broth, place your turkey on top
Step 10: Add the stuffing inside the bird’s cavity
Step 11: Preheat oven to 340F
Step 12: Combine your butter with the beer and mix well.
Step 13: Place your cheesecloth in the mixture
Step 14: Cover your turkey with the cheesecloth and place in the oven
Step 15: Put the turkey in the oven and baste with the beer and butter mixture every 45 minutes
Step 16: Cook until turkey’s internal temperature is 165F
Step 17: Remove the turkey from the oven and tent with aluminum foil. Let the bird rest for at least 30 minutes.
Step 18: Carve serve and ENJOY!
