One of the world’s most coveted shellfish is back on the menu at estiatorio Milos: Carabinero shrimp. As the only restaurant in South Florida offering this delicacy while supplies last,  Milos presents these striking crimson prawns sourced from the deep waters off Spain near the Strait of Gibraltar—considered among Europe’s finest and exceptionally rare to find stateside.

Harvested at depths of 2,300 to 6,600 feet over sandy seabeds, Carabineros are caught using deep-sea trawling, a method that reaches the cold, high-pressure environments where these prawns naturally thrive—conditions that give them their distinctive richness and firm texture. At Milos, the preparation keeps the focus on the ingredient itself: grilled over an open flame, brushed with ladolemono and Greek brandy, finished with fresh parsley, and served whole from the fish display.

A final nod to Spanish tradition comes in the form of a small shot of sherry served alongside. Diners are encouraged to extract the flavorful head juices into the glass, creating a savory, briny sip that balances the shrimp’s natural sweetness with acidity.
