ROASTED CAULIFLOWER

Guests are invited to indulge the flavors and texture of the Roasted Cauliflower at Corvina Seafood GrillBoca Raton’s exceptional seafood-centric restaurant and bar. Made with lemon tahini, golden raisins, and toasted almonds, this dish is perfect for veggie lovers or those looking to try something new to satisfy the palate. 

Ingredients:

  • Cauliflower
    • 1 cauliflower head
    • 2 oz blended olive oil
    • Kosher Salt – to taste
  • Lemon Tahini
    • ¼ cup Tahini paste
    • 2 oz lemon juice
    • 1 garlic clove
    • 4 tbsp ice water
    • 2 tbsp extra virgin olive oil
    • Kosher Salt- to taste
  • 2 tbsp golden raisins (rehydrated in hot water)
  • ⅛ cup toasted sliced almonds
  • 2 tbsp fresh mint chiffonade

Method:

  1. Trim cauliflower into medium-large florets and toss in a mixing bowl with blended olive oil and kosher salt to coat evenly. 
  2. Preheat a sheet pan in a 500-degree oven for 5 minutes. Carefully add oiled and seasoned florets in one layer on the hot sheet pan, and roast in the oven for 6-8 minutes until golden brown and tender.

Lemon Garlic Tahini: 

  1. Add Tahini paste to a mixing bowl. Whisk in minced garlic, fresh lemon juice, ice water, EVOO (extra virgin olive oil), and kosher salt to taste. Reserve.

To Assemble

  1. Place Tahini sauce on a large platter, top with hot roasted cauliflower, and garnish with plumped golden raisins, toasted sliced almonds, and a chiffonade of fresh mint.
