Nestled in South Miami, Mano Libera offers a contemporary interpretation of Italian cuisine rooted in regional traditions and modern techniques. Led by chef and co-owner Marco Giugliano, the restaurant delivers an experience where every detail—from thoughtfully sourced ingredients to warm hospitality—comes together with purpose and personality. This year, Mano Libera was included in the 50 Top Italy, the prestigious global guide celebrating the world’s most noteworthy Italian restaurants, and was added to the Michelin Guide’s Recommended List.

Mano Libera (“free hand” in Italian) reflects Giugliano’s creative and unrestricted approach to cooking. The concept comes to life through dishes that merge classic Italian renditions with playful presentations and international influences, including an intimate Italian omakase experience where the chef curates personalized off-menu tastings inspired by the freshest ingredients available each day.

“At its core, Mano Libera was designed as more than simply a restaurant,” says Giugliano. “The goal is to create an experience centered around sharing, conversation, and emotion — a place where guests feel welcomed, engaged, and transported through an authentic gastronomic journey that reflects the warmth and conviviality of Italian dining culture.”

Deeply inspired by his Campanian and Neapolitan roots, Giugliano embraces the Italian philosophy that exceptional cuisine begins with a few outstanding ingredients treated with care and restraint. The chef incorporates signature products imported directly from the Vesuvian territory — including buffalo mozzarella DOP, pomodorini del piennolo tomatoes, and extra virgin olive oil — alongside locally sourced and seasonal ingredients from South Florida. The menu balances comforting classics with more inventive creations, with all pasta made fresh in-house by hand daily. Traditional Italian dishes are often reinterpreted through a contemporary lens while preserving their original soul.

Before opening Mano Libera, Giugliano trained and worked in acclaimed kitchens across Europe, including Michelin-starred Quattro Passi in London and Taverna Estia in Italy. In Miami, many diners first discovered the chef through Doma in Wynwood, where his contemporary approach to Italian cuisine earned a devoted following.

“At Mano Libera, I finally have the freedom to express everything I’ve learned throughout my journey,” says Giugliano. “I love honoring Italian traditions while pushing myself creatively. Every dish should feel authentic, but also exciting and unexpected.”

One standout example is the chef’s Gnocchetto Alla Genovese, a modern take on the iconic Neapolitan dish traditionally prepared through hours of slow-cooked onions and meat to create a deeply rich sauce. At Mano Libera, delicate handmade gnocchi are tossed in the flavorful Genovese reduction and presented with a refined contemporary touch.

Other offerings range from Linguine Alla Nerano and Spaghetti Alle Vongole to more unexpected dishes such as Tuna Tartare made with avocado mousse, lemon caviar, and wasabi popcorn, and Eggplant Bao Buns topped with pecan crumble.

The restaurant’s lively yet refined atmosphere features bold red accents, marine-inspired details, contemporary artwork, an open kitchen, and a dramatic wine cellar display. A sculptural hand-shaped chef’s table anchors the dining room, reflecting the restaurant’s artistic and immersive identity.
