On December 31st and January 1st, Chef Christopher Zabita, in collaboration with Chef Rosana Quintero will present three unique dining experiences at Cafe Boulud Palm Beach at The Brazilian Court. The program includes an early evening seated dinner, a late night Gala dinner, and a New Year’s Day brunch, each offered as a standalone dining experience.
The New Year’s Eve celebration opens with an early seated dinner, offered from 5:00 to 6:30 PM, and presented as a three-course prix fixe menu priced at $255 per person (children under 10: $75). Diners may begin with selections such as Terrine de Porc with foie gras, black truffle, and pear compote, Charred Octopus with Kalamata olive, and preserved tomato, or Castelfranco salad with whipped ricotta and blood orange. Main course options include Dover Sole with Pernod-braised fennel, hazelnut beurre blanc, and confit lemon, NY Strip with sunchoke gratin, bordelaise, and super green spinach, or fresh lumache pasta with truffle pesto and celery root.
As the celebration continues, a Gala seated dinner is offered from 8:00 to 10:00 PM, a five-course experience priced at $465 per person (children under 10: $160). The Gala menu opens with Tarte aux Huîtres featuring oyster–cauliflower panna cotta, Osetra caviar, preserved lemon, and pickled shallot, followed by Yellowfin Tuna Tartare with avocado, wasabi crema, and crispy tempura. The progression continues with fresh pasta with escargot, Marcona almond, parsley-garlic butter, and citrus gremolata, before culminating in a course of entrées, including NY Strip “Rossini” with foie gras, royal trumpet mushrooms, sauce périgueux, and super green spinach, or Halibut en croûte de brioche with broccolini, Laughing Bird shrimp, dill-buttermilk emulsion, and smoked trout roe. The Gala seating includes a lively DJ set and concludes with a complimentary glass of champagne served at midnight or the end of dinner.
On New Year’s Day, the program shifts to a three-course brunch, priced at $120 per person (children under 10: $50). The menu blends brunch classics with French technique, opening with selections such as Chestnut–Celery Velouté with pickled apples and truffle crème, Pâté en Croûte with foie gras and pear compote, DB Smoked Salmon with crème fraîche and frisée, and Shrimp Cocktail with classic French cocktail sauce. Brunch offerings range from Buttermilk Waffles with citrus marmalade and orange-vanilla butter and Black Truffle Omelette with chèvre and watercress, to heartier plates including Steak & Eggs with Wagyu bavette and pommes lyonnaise, Dover Sole with Pernod-braised fennel and hazelnut beurre blanc, and Roasted Half Chicken with truffle jus. For guests looking to elevate the experience, optional caviar service and shaved black truffle additions are available.
