On Thursday, July 9, 2026, Café Boulud Palm Beach invites guests on an extraordinary five-course voyage through Europe’s most celebrated sparkling wine regions. Beginning at 7:00 PM, the dinner will unfold across five courses within the intimate, elegantly lush surroundings of the iconic Brazilian Court Hotel.
The evening travels from the sun-drenched vineyards of Spain’s Penedès to the steep slate slopes of Germany’s Mosel, pairing iconic expressions of Old World craftsmanship with a beautifully composed menu. Think Gramona’s prestigious “Imperial” Corpinnat alongside a beautifully composed seafood course, or Dr. Loosen’s Riesling Sekt lifting a delicate dessert. The evening spans the great sparkling wine regions of the Old World, weaving together the craft traditions of France, Spain, and Germany into one seamless tasting journey.
Thoughtfully guided by Executive Chef Christopher Zabita, Pastry Chef Rosana Quintero, and Head Sommelier David Sauer, the dinner opens with Calamar con Jamón, a striking composition of piquillo-tomato coulis, serrano ham, and caviar, paired with Montsarra Cava from Spain. Next, Wahoo et Mangue brings a vibrant brightness to the table, with mango salsa, cilantro, and aji amarillo alongside Charles Bove’s Rosé Touraine from the Loire Valley.
The heart of the evening arrives with Lubina al Vapor, a beautifully delicate steamed bass with braised fennel, Pernod beurre blanc, and crispy sushi rice, paired with Gramona’s celebrated ‘Imperial’ Corpinnat Spain 2019. This gives way to a more indulgent Schnitzel de Porc, rich with brown butter broccolini purée, lemon, and mustard jus, and paired with Sea Smoke’s ‘Sea Spray’ from Santa Rita Hills 2016.
The evening will conclude on a sweet, effervescent note with Ananas-Krapfen, a pillowy pineapple pastry with peaches and lime gel, delicately paired with Dr. Loosen’s Riesling Sekt from the Mosel. Priced at $195 per guest, “Sparkling Wines of the World” offers a rich and transporting journey through the celebrated sparkling wine regions of the Old World.
