Inside The Diplomat Beach Resort’s Bold New Culinary Chapter

As The Diplomat Beach Resort moves closer to its May 2026 transformation into Signia by Hilton, the iconic oceanfront resort is signaling what’s next with food and drink. Five reimagined dining concepts have debuted across the Hollywood property, ushering in a more design-forward, flavor-driven era that stretches seamlessly from morning coffee to late-night martinis.

The refresh marks a major milestone in the resort’s extensive renovation, introducing spaces that feel more like standalone destinations than traditional hotel outlets. Each concept has its own identity, yet together they create a cohesive culinary journey rooted in global influence, South Florida energy and polished hospitality.

From Sunrise to Sunset

Mornings begin at Palmea Kitchen, a light-filled breakfast café that puts a Mediterranean spin on familiar classics. Orange blossom-crusted French toast, shakshuka finished with tahini aioli and a breezy indoor-outdoor setting make it an easy place to linger before a beach day or meetings on property.

Steps from the sand, Playa delivers a more relaxed rhythm. The beachfront bar and grill leans into bold Latin flavors with dishes like lobster quesadillas, coconut ceviche and a smoky parillada, all designed to pair effortlessly with frozen cocktails and ocean views. It’s the kind of spot made for long afternoons that drift into golden hour.

At the heart of the resort, Solara anchors the newly renovated lobby with an all-day lounge concept inspired by tropical modernism. Floor-to-ceiling windows overlook the pool and Atlantic beyond, while the menu moves fluidly from Mediterranean staples like falafel and hummus to global crowd-pleasers such as gochujang ahi tuna and a refined cacio e pepe.

For guests on the go, The Press offers an elevated café experience with La Colombe coffee, matcha lattes and a lineup of house-made pastries. Almond croissants, brioche buns and donuts from pastry chef Henry Martignago give the grab-and-go option real staying power.

A Reinvented Steakhouse Moment

Evenings belong to Diplomat Prime, the resort’s signature steakhouse, now fully reimagined with a sleek, modern design that mirrors the precision of the kitchen. The menu highlights prime cuts, wagyu and dry-aged steaks alongside Maine lobster fra diavolo, braised short rib and a full caviar selection.

A thoughtfully built beverage program complements the food, from an expansive wine cellar to cocktails designed with equal intention. The icy Prime martini, served with an oyster and optional caviar, has quickly become a standout. A new outdoor patio adds another layer to the experience, bringing live music, twinkling lights and a lively energy that appeals to both hotel guests and locals.

Looking Ahead

These five concepts, along with expanded in-room dining and grab-and-go options, set the tone for what’s to come as The Diplomat enters its next chapter. Early 2026 will bring the debut of Verandah Social Club, a private adults-only pool and beach club, followed by Club Signia, new culinary events and the highly anticipated return of the resort’s legendary speakeasy.

Together, the changes reflect a broader vision for dining at The Diplomat, one that blends elevated design, destination-worthy cuisine and service that feels intuitive rather than scripted. It’s a clear signal that as the resort becomes Signia by Hilton, its culinary identity is stepping confidently into the spotlight.
