Sweet Potato Medallions With Goat Cheese

INGREDIENTS:
2-3 Sweet Potatoes, washed & sliced ¼ inch thick
8 oz Goat Cheese, room temperature
½ c Candied Pecans, chopped
½ c Dried Cranberries, chopped
2 sprigs Rosemary, finely chopped

METHOD:
Step 1: Arrange sliced potatoes in the air fryer, preheated to 350 degrees F, and cook for 12 minutes. Flip the potatoes halfway through the cooking time. After the initial 12 minutes, increase the air fryer temperature to 400 degrees for an additional 3 minutes to achieve a delightful combination of a crisp exterior and a soft interior.
Step 2: While the air fryer is diligently working on perfecting the potatoes, combine goat cheese with cranberries and rosemary to create a flavorful mixture.
Step 3: Once the potatoes have cooled, generously spread approximately ½ tbsp of the goat cheese mixture onto each medallion. As the finishing touch, use the same ingredients to garnish your creations. Crown your appetizers with a sprinkle of the finely chopped candied pecans and shine as the star of the evening!

GARNISH: Parsley leaf, chopped chive, sprig of rosemary

SERVES: Each potato can yield 10-14 slices
