Summer Shrimp Rolls With Ginger Dipping Sauce

INGREDIENTS:
WRAPS:
16 Rice Paper Wraps (square is easiest!)
1 ½ lbs. Pink Florida Keys Shrimp
1 ½ c Cooked Brown Rice (optional)
1 English Cucumber, cut into 16-3 inch spears
1 ½ c Carrots, shredded
1 ½ c Red Cabbage, shredded
½ c Pickled Red Onion, drained
2-3 Hass Avocados, 2-3 slices per roll
¼ c Thai Basil
1 bunch Green Onion, garnish
GINGER SAUCE:
1 ½-2 oz Ginger, peeled
7-8 oz Carrots, peeled
1 medium Onion, peeled
½ c Rice Vinegar
½ c Veggie Oil
3 tbsp Soy Sauce
1 tbsp Sugar, of choice
METHOD:
Step 1: Let’s start by preparing the shrimp! For a quick and simple method, immerse the shrimp in a saltwater bath, bring it to a boil, and cook for 2.5-3 minutes. Drain the shrimp and immediately transfer them to an ice bath to halt the cooking process and rapidly cool them.
Note** For an extra burst of flavor, enhance the cooking water with 1 cup of chardonnay, 1 quartered lemon, 1 quartered lime, a halved small onion, 3 cloves of garlic, 1 tsp caraway seed, and 1 tsp fennel seed. Follow the same cooking time and process.
Step 2: Create the ginger sauce by blending all the listed ingredients in a blender. While the sauce chills in the refrigerator, prepare your ingredients and assemble your wraps.
Step 3: Assembling the wraps is a personal affair, allowing you to customize them according to your preferences, whether with rice or without, fresh onions or pickled. Begin by quickly submerging each sheet of rice paper, aiming to wet but not soak it. Place the sheet on a cutting board for easy assembly.
Note** If using square wraps, position them on the cutting board with one point facing towards you.
Step 4: Now, the fun part—layering! Add 2 tbsp of rice, 1 tbsp of cabbage, 1 tbsp of carrot, 1 cucumber spear, 2-3 slices of avocado, 3-4 basil leaves, 3-4 shrimp, and 1 oz of pickled onions. Bring in the left and right corners, then roll the wrap slightly firm to maintain its shape. Serve your rolls with the delightful ginger sauce and relish them on a hot summer day!
GARNISH: Thin sliced green onions, toasted sesame seed, or crumble dried seaweed
