Strawberry Spinach Salad With Poppy Seed Dressing

INGREDIENTS:
Salad:
¾ c Walnuts, roughly chopped
½ c Red Onion, thinly sliced
10-12 oz Baby Spinach
1 lbs. Strawberries, hulled & quartered
¾ c Feta, crumbled
Poppy Dressing:
½ tsp Dijon
1 ½ tbsp Raw Honey
1 tbsp Poppy Seeds
¼ c Balsamic Vinegar
½ tsp Kosher Salt
¼ tsp Black Pepper
3 tbsp Extra Virgin Olive Oil
METHOD:
Step 1: Create your flavorful dressing by combining all the ingredients except for the olive oil. As you mix, gradually drizzle in the oil. Alternatively, if you opt for a food processor, blend all ingredients (excluding poppy seeds), process the mixture, then add the seeds.
Step 2: As your dressing chills in the refrigerator, artfully layer your salad. For bowl presentations, it’s recommended to create two layers – the first with half of the greens and ingredients, followed by a second layer of greens and ingredients.
Step 3: When ready to indulge in your fresh summer treat, dress your salad at the time of serving to maintain the crispness of the spinach and ensure a delightful culinary experience.
