Thai food lovers, rejoice! In addition to freshly prepared sushi, Delray Beach’s newly opened Shiitake Asian Bistro serves up tasty Thai dishes such as chicken yellow curry, chicken gyoza and Chef Rena Dongparteep’s favorite: grilled salmon with garlic fried rice. “This is also our most popular dish,” says Dongparteep, who co-owns the restaurant with her husband, Chanin Kluaytrakul. “It’s at a good price point, and it features quality ingredients and delicious flavors such as fresh-caught salmon, jasmine rice and garlic.” 4900 Linton Blvd., Delray Beach; 561.865.5538; shiitakebistro.com

RECIPE

Ingredients:
8 oz salmon, filleted
2 cups cooked jasmine rice
2 tbsp soybean peas
¼ cup onion, diced
¼ cup celery, chopped
2 tbsp scallion, sliced
1 whole egg
½ tbsp dried garlic
¼ tsp white pepper
1 tbsp oyster sauce
½ tbsp soy sauce
½ tbsp sugar
2 tbsp vegetable oil

Method:
Grill salmon on a flat grill until it cooks well and set aside. Heat up the pan with vegetable oil (on medium heat), then add the egg and stir it a couple of times and leave it until cooked. Add soybean peas, celery and diced onion and cook for 1 minute. Add dried garlic and cooked jasmine rice and mix together. Add oyster sauce, soy sauce and sugar and mix together on medium heat for 1 minute until cooked well, then add a little bit of white pepper and sliced scallion.
