Frankie’s Meatballs from Pizzeria Sophia
Delray Beach’s new Pizzeria Sophia is a gourmet interpretation of a classic pizza parlor, where fresh ingredients are sourced from local farms and pizza dough is made daily on-site. “This meatball recipe traveled from Sicily to South Philly and, now, South Florida,” says owner Frank Crupi, a former partner at Miami’s Andiamo Pizza. “It’s what Sunday mornings were all about when I was growing up. My mother would yell at us because we’d steal a few meatballs and eat them on bread from the bakery when they were meant for supper—they were too good to wait for!”
RECIPE
Ingredients:
5 pounds 100% ground sirloin beef
5 large Grade-A eggs
2 cups Italian breadcrumbs
1 cup grated Pecorino Romano cheese
4 oz ground garlic
1 bunch fresh Italian parsley, chopped
2 oz black pepper
2 oz kosher salt
Method: Mix all ingredients thoroughly in a large bowl. Separate and roll 3 oz meatballs from the mixture. Pan-fry meatballs until crispy on the outside. Optional: Add to marinara sauce (or gravy as I call it).
