On Wednesday, March 4, 2026, Café Boulud will host an intimate Champagne dinner celebrating the legacy of Champagne Billecart-Salmon at the elegant Brazilian Court Hotel. The evening begins with a reception at 6:30 p.m., followed by a seated five-course dinner at 7:00 p.m., each course thoughtfully paired with seven distinct cuvées from one of Champagne’s most revered family owned houses.
Founded in 1818 in Mareuil sur Aÿ, Billecart Salmon remains led by descendants of its founding family. Established through the marriage of Nicolas François Billecart and Elisabeth Salmon, the house has spent more than two centuries refining a style defined by precision, elegance, and balance. Rooted in Champagne’s chalk rich soils and the time honored méthode champenoise tradition, its wines are celebrated worldwide for their finesse and expressive character.
The Palm Beach experience is guided by Executive Chef Christopher Zabita, Pastry Chef Rosana Quintero, and Head Sommelier David Sauer, joined by Clément Calleja of Billecart Salmon, offering guests a layered exploration of the house’s craftsmanship through both kitchen and cellar.
The menu opens with beef carpaccio accented by green apple, fennel, and horseradish, paired with Le Blanc de Blancs Grand Cru NV. A chilled soupe d’avocat with grilled shrimp and Osetra caviar follows, complemented by Le Rosé 2015. Turbot with endive, bergamot, and beurre blanc is served alongside Cuvée Louis Salmon Blanc de Blancs 2013 and Château Malherbe 2022. The main course features veal loin with morel mushrooms, beans, and sauce Albufera, paired with Cuvée Nicolas François 2012 and Cuvée Nicolas François en Jéroboam 1998.
The evening concludes with Camomille Tropicale, a dessert of chocolate, pear, and pineapple, served with Demi Sec NV. The five-course dinner is priced at $425 per person, offering a rare opportunity to experience the enduring artistry of Billecart Salmon in one of Palm Beach’s most refined settings.
