Buttermilk Biscuits at South Bar & Kitchen

Buttermilk Biscuits

Ingredients: 

  • 8 cups all purpose flour
  • 8 teaspoons baking powder 
  • 1 teaspoon sugar 
  • 2 teaspoons baking soda 
  • 4 teaspoons Salt (Fine kosher) 
  • 1 pound butter frozen 
  • 4 cups buttermilk 

Instructions

  1. Preheat the  oven to 400°F with the fan off. 
  2. Place butter in the freezer the night before to ensure it is very cold.
  3. First, measure out the dry ingredients and sift them into a large bowl.
  4. Then, remove butter from the freezer and grate with a box grater (onto a cold sheet tray) using the large-holed side.
  5. Sprinkle the butter into the bowl with dry ingredients to avoid clumps. Then, gently mix to get butter pieces coated in flour, but not sticking together.
  6. Next, add buttermilk to the bowl with dry ingredients and butter.
  7. With a gloved hand, mix again gently just until it can be removed from the bowl.
  8. On a lightly floured surface, transfer the biscuit dough from the bowl.
  9. Then, gently press down on the dough with your fingers until it is roughly one inch thick.
  10. Fold the dough in half and press down to the same thickness, while ensuring to use as little flour as possible.
  11. Next, fold the edges into the middle to form a square to ease the cutting process. After each fold, make sure to press down again with your fingers.
  12. Fold the dough 10 times and then press down to create ultimate flakiness.
  13. Cut the dough into squares and place squares on a tray lined with parchment.
  14. Then, douse the cut squares with melted butter.
  15. Turn the oven on to 400°F and then bake for 14-17 minutes. Make sure to check regularly.
  16. For the final step, brush the squares again with butter and sprinkle flaky salt before serving.
