There’s a new reason to linger a little longer over brunch in Weston. This winter, Café Bastille brings its Paris-meets-Miami aesthetic, beloved menu staples and newly reimagined clean-ingrident approach to Weston Town Center. 

Long loved in Downtown Miami, Fort Lauderdale and Miami Beach, Café Bastille has cultivated a devoted following for its stylish take on French café culture. Now, with its fourth South Florida outpost (and second in Broward), the brand sets its sights on Weston, one of the region’s most community-minded enclaves.

A Parisian Corner Café, Reimagined for Weston

Anchoring a prime corner of Weston Town Center, Café Bastille’s newest home brings a polished yet effortless European sensibility to the neighborhood. The café’s signature soft green sets the tone, leading into an airy interior outfitted with classic wooden bistro chairs, crisp white-and-gold details and calming sage hues.

Wide-open, floor-to-ceiling windows transform the café into a breezy indoor–outdoor retreat, ideal for Weston’s sunshine-filled mornings. The outdoor nook, complete with charming café tables and relaxed lounge seating, makes it easy to settle in with your favorite latte or a flaky pastry.

“We’re so excited to finally bring Café Bastille to Weston,” said co-founder Estelle Bellegy. “Our goal is to become a true neighborhood café, a place people can stop in for a weekday breakfast, a lingering weekend brunch or a quick moment of comfort whenever they need it.”

A Cleaner, Simpler Way to Brunch

With the Weston debut comes Café Bastille’s biggest menu evolution yet. Founders Bellegy and Benjamin Amsallem have ushered in what they call a “conscious shift.” A commitment to simplified ingredients, elevated sourcing and the removal of seed oils across the board.

All locations will now cook exclusively with beef tallow, butter and olive oil, while proteins come from free-range chickens and cage-free eggs. Even non-dairy milks have been scrutinized to ensure they are seed-oil-free.

The Weston opening serves as the launchpad for this refreshed menu, which will roll out at all other Cafe Bastille outposts.

Dish Highlights Include

  • Sweet Potato Waffles: A gluten-free indulgence topped with strawberries, maple-pecan butter, candied pecans and housemade granola.
  • Harvest Chicken Toast: A savory standout layered with tomato, feta, arugula, pickled onions, lemon and extra-virgin olive oil.
  • Avo & Eggs: A minimalist plate with half an avocado, eggs your way and toasted multigrain sourdough.
  • New Signature Bowls
    • Spicy Bowl: quinoa, arugula, avocado, cucumbers, cherry tomatoes and spicy mayo.
    • Stella’s Fav Bowl: lentils, short-grain rice, avocado, tomatoes, peppers, onions, lemon and cilantro aioli.
    • Add protein, such as chicken thighs, salmon or beef fillet.

Of course, fan favorites remain: the cult-classic Bae’s Shakshuka, the French Breakfast Burrito wrapped in a crepe, the Dulce de Leche Croissant Bread Pudding and the always-tempting lineup of French pastries.

Matcha Gets the Spotlight Even in the Cocktail Menu

Perhaps the most playful surprise of the Weston location is its matcha-centric beverage program, both nonalcoholic and spirited.

New Iced Matcha Creations:

  • Mango Foam Matcha with housemade mango purée
  • Coconut Cloud Matcha with coconut water and matcha foam
  • Tiramisu Matcha Latte with mascarpone and ladyfinger

For the first time, Café Bastille also introduces matcha cocktails, including:

  • Matcha Mojito 
  • Matcha Tini made with vodka, vanilla and Irish cream

Classic cocktails like the Passion Fruit Margarita remain, along with bottomless brunch staples like Mimosas, Bellinis and Sangria pitchers.

Nonalcoholic drinkers can choose from fresh-pressed juices, a Detox Green blend or smoothies like the Beauty Protein with blueberry, banana, Greek yogurt, oat milk and marine collagen.

Between the refreshed menu, next-level matcha creations and its signature cozy aesthetic, Café Bastille might just become Weston’s most irresistible new habit.
