Garlic Mashed Potatoes

INGREDIENTS:
2 lbs. Yukon Gold Potatoes, peeled & quartered
5 oz heavy cream
3-4 Garlic Cloves, peeled & smashed
4-5 tbsp Unsalted Butter
1 oz Sour Cream
3 tbsp Chives, thinly sliced
1 tsp Salt
½ tsp Black Pepper
METHOD:
Step 1: Begin by boiling the potatoes until they are fork-tender, then drain them. Utilize a potato ricer to carefully smash the potatoes back into the same pot they were boiled in. In the absence of a ricer, a hand masher or electric hand mixer can be used as alternatives.
Step 2: While the potatoes are still hot, incorporate the remaining ingredients (setting aside 1 tbsp of chives) and thoroughly mix. Maintain low heat on the stove during the mixing process to achieve a thick and creamy consistency in the potatoes. Garnish the dish with the reserved chives, crack some fresh pepper, and savor the delightful combination of zesty and fluffy Yukon Gold clouds.
GARNISH: fresh chives & cracked pepper
