Fennel Sausage Stuffed Mushrooms

INGREDIENTS:
Mushrooms:
1 large containers Baby Bella Mushrooms, stemmed & wiped
½ c Parmesan, finely grated
Sausage:
1 lbs. Ground Pork (80/20 preferred)
2 tsp Garlic Cloves, finely grated
1 tsp vermouth
½ tbsp red pepper flakes (optional)
2 tsp Fennel Seed, course ground
2 tsp salt
METHOD:
Step 1: Combine ground pork with the listed ingredients, utilizing either a standing mixer or hand mixing. Ensure thorough integration of the meat and seasonings. Once combined, refrigerate the mixture while preparing the mushrooms.
Step 2: Arrange stemmed and cleaned mushrooms, top side down, on a lined baking tray to create small bowls for the sausage mixture. Scoop approximately 1 tbsp of sausage into each mushroom, then crown them with Parmesan cheese before baking. Set the oven to 350 degrees F, and bake for approximately 20-25 minutes or until the mushrooms achieve a delightful golden brown.
Step 3: After baking, allow the mushrooms to rest for 2-3 minutes before serving, as they will be quite hot. Enhance the presentation with a garnish of thin chive slices or finely chopped parsley for that extra zing and a burst of color. Now, savor and enjoy!

SERVES: 1 large container yields approximately 14-20 mushroom caps
