Guests can expect standout dishes such as Octopus and bacon Gordita. It’s the reinterpretation of one of Mexico’s most iconic street food dishes, the ‘fried gordita with chicharrón.’ The chef combines the flavor of chilhuacle chili (a native Oaxacan chili) with black miso (fermented soybean paste), which, despite being distant ingredients, complement each other very well.
“This is democratic food,” says Chef Francisco, whose culinary roots stretch from street food stalls in Iztapalapa, Mexico City, to acclaimed kitchens abroad. “I cook to make people happy. I want everyone to feel loved through my food—whether it’s a simple taco or a refined seafood dish.”
Complementing the cuisine is a thoughtfully curated cocktail program that highlights local spirits, housemade infusions, and seasonal ingredients. Signature drinks like Yuma & Gin and Purple Kuko are designed to refresh and inspire—whether enjoyed at golden hour on the terrace or beside the firepit after dark.
