INGREDIANTS:
1# white beans, soaked overnight
1qt white onion, small diced
1pt celery, small diced
1pt carrots, peeled & small diced
3c stewed tomatoes, crushed with the juices
1/2c garlic, thinly sliced
2.5qt chicken stock
3T thyme, minced
2 bay leaves
Water
Oil/butter
METHOD:
Step 1: In a pot of unseasoned water, boil white beans until tender, adding water as needed. When soft, drain water & set beans aside.
Step 2: In a sauce pot, sweat onions, celery & carrots until soft. Add garlic, cook 2-3 minutes. Add tomatoes & cook down until the liquid is dark red & thick. Add thyme & bay leaves. Add cooked white beans, cover with chicken stock & cook down until a creamy texture is achieved. Season with salt & butter
