Heirloom Tomato Carpaccio by James Beard Semifinalist Melissa Araujo

HEIRLOOM TOMATO CARPACCIO

James Beard: Best Chef South 2024 semifinalist, Executive Chef/Owner Melissa Araujo of Alma Cafe, shares her Heirloom Tomato Carpaccio recipe for those looking for a quick and tasty spring treat.

Ingredients: 

  • 2 large Heirloom tomatoes
  • ½ cup cherry tomatoes, halved
  • 4 oz burrata cheese
  • 2 Tbsp. extra virgin olive oil 
  • 3 Tbsp. apple cider balsamic glaze (choose your favorite brand)
  • Smoked sea salt or grey salt to taste
  • Fresh oregano leaves and torn basil leaves for garnish

Method: 

  1. Thinly slice heirloom tomatoes and spread them over a large serving dish.
  2. Add halved cherry tomatoes, then pull the burrata into small pieces and place over everything.
  3. Drizzle olive oil over everything, garnish with oregano and basil, and sprinkle salt to taste.
