HEIRLOOM TOMATO CARPACCIO

James Beard: Best Chef South 2024 semifinalist, Executive Chef/Owner Melissa Araujo of Alma Cafe, shares her Heirloom Tomato Carpaccio recipe for those looking for a quick and tasty spring treat.

Ingredients:
- 2 large Heirloom tomatoes
- ½ cup cherry tomatoes, halved
- 4 oz burrata cheese
- 2 Tbsp. extra virgin olive oil
- 3 Tbsp. apple cider balsamic glaze (choose your favorite brand)
- Smoked sea salt or grey salt to taste
- Fresh oregano leaves and torn basil leaves for garnish
Method:
- Thinly slice heirloom tomatoes and spread them over a large serving dish.
- Add halved cherry tomatoes, then pull the burrata into small pieces and place over everything.
- Drizzle olive oil over everything, garnish with oregano and basil, and sprinkle salt to taste.
