
JARANA Collab Dinner with Chef Victoriano & Chef Martha Palacios

JARANA Aventura continues its Chef Collaboration Series with a three-night culinary event featuring Chef Victoriano of La Mar San Francisco and Chef Martha Palacios of JARANA Aventura. The $75-per-person, family-style menu is a vibrant celebration of coastal Peruvian flavors, where tradition meets innovation. Highlights include Croquetas Chifa—rock shrimp in squid ink tempura with a sweet condensed milk glaze and pickled vegetables; Cebiche Victoriano with local white fish in sunchoke leche de tigre and crisp artichoke chips; and Arroz Jarana, a wok-fried rice with short ribs, shrimp, ají amarillo, and chicha de jora, topped with jumbo prawns and salsa criolla. The experience ends on a playful note with Suspiro Loco, a layered dessert of manjar de yemas foam, dulce de leche ice cream, almond crumble, strawberry salad, and a cotton candy cloud.
