Beyond Earth Month: How Torno Subito Miami is Redefining Sustainable Dining

April may be Earth Month, but at Torno Subito Miami, sustainability is more than just a seasonal trend. Led by Executive Chef Bernardo Paladini (protégé of world-renowned Chef Massimo Bottura), this Michelin-recognized hotspot is proving that environmental responsibility and fine dining can–and should– go hand in hand.
In addition to year-round efforts, Torno Subito is still going the extra mile this month by partnering with Illy coffee to donate a portion of proceeds from every Espresso Martini sold throughout April to Food for Soul, Bottura’s global nonprofit dedicated to combating food waste and supporting equitable food systems.
Sip by sip, guests can support a larger mission—all with an espresso martini in hand. But Torno Subito’s eco-efforts don’t stop there.
Trash Into Treasure
Torno Subito is all about making a positive impact year-round! Through their partnership with Compost for Life, they’ve already kept over 1,000 pounds of food scraps out of landfills, turning kitchen waste into nutrient-packed compost for South Florida farms. And it doesn’t stop there—Torno Subito also works with Glass for Life to give wine bottles a second chance, helping to restore South Florida’s beautiful beaches.
Inside the kitchen, sustainability is more than a goal—it’s a daily practice. Chef Paladini’s “zero-waste” philosophy can be found in delectable dishes across the menu. From parmesan rinds to aromatics, what would normally be tossed is transformed into something extraordinary!
From the very start of the meal, zero-waste dishes take the spotlight, as each guest is greeted with a No Waste Amuse Bouche. Inspired by the comforting Italian dish Pappa al Pomodoro, this first bite redefines day-old bread into a savory tomato and bread pudding, topped with béchamel foam made from Parmigiano Reggiano rinds and finished with crispy breadcrumbs.
Another standout zero-waste dish on the menu is the Milano-Portofino Risotto. A cultural creation blending classic Milanese saffron risotto and Portofino’s seafood-laced Risotto alla Crema di Scampi, this dish is topped with a vibrant red dust made from dehydrated, repurposed aromatics that would typically be discarded.
Chef Paladini sums it up best: “Sustainability should be playful, not preachy. At Torno Subito, we want to show that doing good for the planet can also mean creating beautiful, exciting food.”
Local Love with Global Impact
Torno Subito is committed to sourcing hyper-locally whenever possible—from Capri Organic cheeses crafted in Naples, FL to fresh produce grown at Empower Farms in Homestead. Cutting down on long-distance food transport helps the restaurant reduce its carbon footprint whilst helping Florida’s agricultural community.
From now through Earth Month—and after—Torno Subito Miami is raising the bar for what it means to dine consciously. Whether you’re indulging in a cocktail for a cause or tasting the reinvention of leftover ingredients, this is the place where sustainability is always on the menu.
