Baked Sweet Cosmic Apple Acorn Squash


Ingredient List:
  • 2 Cosmic Apples *You should purchase extra to eat later!”
  • 2 Acorn Squash
  • 1 Orange
  • Butter or coconut oil
  • Cold Pressed Olive Oil
  • Brown Sugar
  • Cinnamon
  • Whole Nutmeg
  • Tellicherry Pepper *or your choice cracked pepper
  • Garam Masala
  • Himalayan Salt
  • Lemon
  • Garlic
  • Rosemary

I love to begin with the Cosmic Apples first. If you have not enjoyed a cosmic apple, this is guaranteed to be your new fave!

  1. Preheat your oven to 375 degrees
  2. 2 Cosmic Apples- Slice thin and place in a small bowl. Squeeze a half of lemon over the apples.
  3. Melt 2 Tbs Butter Or Coconut For alternative, pour over apples.
  4. Add 3 Tbs Brown Sugar, 1 tsp cinnamon, Fresh grated Nutmeg  (I love nutmeg and the smell so I like to go a little heavy.)
  5. Toss the apples and set aside.
  6. Finely chop 3 Tbs Hazelnuts, set aside
  7. 2 Butternut Squash washed, halved and deseeded
  8. Add 2 Tbs olive oil
  9. dd to olive oil, juice and 1 tsp orange zest from one orange
  10. Add dry seasonings to olive oil juice mix and 3/4 tsp of each Garam Masala, Fresh Cracked Tellicherry pepper, himalayan salt.
  11. Next add 1 Tsp of each minced fresh rosemary and garlic.
  12. Brush the seasoned olive oil over your 4 prepared butternut squash evenly.
In a spiraled layer, place the apples inside the butternut squash.

Time to Bake!

  1. Place squash on sheet pan lined with parchment and bake for 15 minutes
  2. Remove and add chopped hazelnuts, Bake an additional 15 minutes
  3. Let’s check the squash, as ovens do vary! A toothpick or knife will do the trick. Your squash should be soft when poked. If it needs additional cooking time, bake more in 5 minute increments.
