Capitol Hill Restaurant

Just in time for the crisp weather, award-winning restaurant Art and Soul has launched new seasonal lunch and dinner menus under the guidance of new Executive Chef Robert Weland. Guests of the Capitol Hill mainstay are invited to indulge in fresh, regional-inspired offerings that are perfect for the cozy months ahead. With expansive indoor and outdoor areas, diners have the option of enjoying a meal al fresco on the patio overlooking the Capitol Dome or within the walls of the famed restaurant, beautifully adorned with inspired art and elegant seating.

A celebrated culinary talent, Chef Robert Weland has taken the helm as the Executive Chef at Art and Soul, overseeing the innovative food and beverage concepts at Art and Soul and the seasonal Deck 11 rooftop. With a career that spans over two decades, Chef Weland has become renowned for his dedication to seasonal ingredients, farm-to-table practices, and a deep-rooted passion for sustainable cooking. Before joining YOTEL Washington DC, Chef Weland trained in France and New York before moving to Washington, DC where he worked at notable establishments such as Poste Moderne Brasserie in Kimpton’s Hotel Monaco before opening his own restaurant, Garrison, on Capitol Hill. His approach to the kitchen reflects his commitment to crafting dishes that are both visually stunning and flavorfully balanced, earning him accolades in some of the nation’s most prestigious culinary circles.

The fall-winter dinner menu will feature unique signature dishes such as Red Wine Braised Rabbit with poppyseed tagliatelle, applewood bacon, caramelized fennel, and hen of the woods mushrooms; Grilled Virginia Bison Hanger Steak served with an heirloom tomato salad, red onion, basil, and blue cheese; or Pan Seared Long Island Duck Breast with local peaches, fennel, and lavender. For more traditional offerings, guests can choose from Sweet Corn Cappelletti made with stracchino cheese, chives, and parmesan; New Frontier Bison Burger with Shelburne cheddar, parsley-shallot butter, and potato gaufrettes; or Southern Fried Chicken served with Anson Mills creamy grits and braised collard greens.

Diners can begin their meal with starters like a Half Dozen Chilled Kumamoto Oysters with champagne mignonette; Cast Iron Griddled Sweet Potatoes enhanced with miso, ginger, and toasted sesame seeds; and Crispy Squash Blossoms made with smoked provolone, fresh ricotta, and romesco sauce. Crunch on Local Radishes and Vermont cultured butter with sea salt; Warm Gougères with poppy seeds and sea salt; or sip on a light Chilled Heirloom Tomato Gazpacho served with cucumber sorbet.

The lunch menu offers a variety of sandwiches like a Fried Chicken Thigh Sandwich with guacamole, pimiento aioli, pickles, and lettuce; a classic BLT with house-smoked bacon, arugula, heirloom tomato, and aioli; and an Avocado Sandwich made with lemon ricotta and local tomatoes. For a local Salvadorian favorite, indulge in Senis’s Pupusas, filled with slow-cooked pork, mozzarella, tomato, jalapeño, and avocado salsa verde. Guests who prefer a lighter lunch can try the Caesar Salad with smoked bacon and little gem lettuce (white anchovies optional); the Local Arugula Salad with basil, mint, figs, parmesan, and an aged sherry vinaigrette; or reminisce on summertime with the Summer Three Bean Salad with lemon, arugula, and crispy white anchovies.
